Why I love tHIS TOFU CHOW MEIN RECIPE
Once I started diving into the research around tofu and soy products, I realised there’s actually evidence showing they may help reduce the recurrence of breast cancer and support menopausal symptoms. On top of that, soy is a complete protein, meaning it contains all nine essential amino acids — a massive win nutritionally.
That’s why tofu and other soy foods became something I wanted to include more often, and this tofu chow mein recipe quickly turned into one of my go-to's. It’s incredibly simple, super versatile, and works with whatever veg you already have in the fridge. You can even mix extra vegetables into the omelette or throw in a little chilli if you’re feeling spicy!
